Sulfite-Free Kale and Lentil Soup


(And there was no bleeding.)

So yeah, there it is…it was actually really tasty.

I have to warn you something: Kale+Lentil=full colon detox.  That is all I am going to say.

Here is how I got there…

use this stuff


  • 1 1/4 cup lentils (I used the green ones)
  • 2 tbsp Olive oil
  • 1/2 tsp ORGANIC ground cumin (this may not work for everyone)
  • 1 tsp sea salt
  • 2 organic bay leaves
  • 4 fresh organic cilantro stems+4 fresh organic parsley stems, tied in a bundle. (That was interesting.  Think Bridget Jones Diary.  More later.)
  • 7 cups water
  • 4 cups organic kale (You can also use organic spinach)
  • 1/4 cup fresh chopped cilantro
  • ground black pepper to taste
  • dollop of plain greek yogurt for serving (I always use Fage…it’s so creamy and yummers)

OK, so first of all, I picked some gorgeous basil and parsley from the garden but then I tied it in a bundle.  I didn’t really get it and I was clearly being extra blond.  I didn’t really get how to “bundle it” so I went out to Thor’s “shop”  in the Man Cave a.k.a garage and I found these three things.

Please do not forget to the notice the bottle of organic wine that helped me get through this.

Thought process: plastic will melt, duct tape will give me cancer.  I think that the string had saw dust all over it, but…

I immediately thought of this:

"There is not enough blue food in the world."

I decided, “what’s a little garage dirt?  At least it’s not blue string.  And so we move on.

Heat the olive oil over medium heat in a stock pot or large sauce pan.   Add the water, lentils, 2 bay leaves and the bound herbs.


Crikey, that looks nasty.

I brought that to a boil, turned it down to simmer and I covered in for about 20-30 minutes.

After that, remove the lid and toss in the kale.  Let it simmer for 10 more minutes and toss the cumin in too, if you can use it.   Right near the end, I put in the cilantro, sea salt and pepper.  Garnish with parley spring and yogurt dollop.

You can also serve the leftovers over basmati organic white rice.

    Heather –
    I must learn more. Tell me about the organic wine you can drink. All the ones I have found still have the evil “contains sulfites” on the label. The only one that even had the natural sulfites stripped from it that I tried wasn’t really worth drinking. I would love to learn what you can have.

    I am living on this stuff. It does NOT bother me, but it may bother someone else…It’s called Bonterra…I get the Chardonnay and The Jewels has it in the organic section but not all stores carry it…Whole Foods has it and my Trader Joe’s. DO NOT get a bottle that is corked…only twist cap. It makes a difference.

    I am so happy to have found your blog you make me laugh, and these days I do not feel like laughing much. I too now Suffer from Sulfites! I had a severe reaction on January 16th,2011.
    My first. I took a ride in the ambulance after having a typical Sunday dinner…pasta and red wine.
    Well within 1 hour hives all over took 2 benedrayl that did not stop them. I knew I was in trouble when I became flushed and felt faint. My stomach hurt felt the blood drain out of my body. I had tightness in my chest so I thought I was having a heart attack too.

    My daughter called 911 because I felt like I would not make it to the hospital.
    The young and cute paramedics gave me 2 shots of a epipen and finally as they wheeled me out to the ambulance I felt like I could breathe again. In the ambulance they tried putting a IV in me but my veins kept blowing in their words. Then I got the shakes from all the adrenaline. Then I felt like I was crashing again and my blood pressure went down and they gave me another half of epipen.

    Got to hospital they did get an IV in me and proceeded to give me prednisone.
    Finally after a couple hours went home with the instruction to see a doctor.

      Lauretta…welcome! So glad you found the blog!
      I am so sorry to hear about your allergy and reactions…how scary!
      I bet the mixture of red wine and any garlic or onion probably had a lot to do with your pasta dinner reaction.
      I still curse the Gods over my loss of the entire onion and leek family.
      But hooray for cute and young paramedics…remind me to tell you sometime about the time I passed out on the street in Edinburgh and ended up hanging out with him for the rest of the night and making out with him in the ambulance. Tote serious. Viva la Scots!
