What the heck CAN I have…

I am going to make a list of things that I am learning to eat.  I will add to it as I go along.  There is not much on here because, frankly, I don’t know what the heck to eat.  I am sure that there will be Cecille’s corner ideas and  Tracy suggestions.   A lot of these ideas came from those two so here goes…

*I season organic chicken breasts with sea salt and some fresh dill and toss them on them grill so I can have them all week.  My favorite thing to make on the run is a chicken avocado sandwich.  I like to get that really good Italian loaf bread from the bakery section at the Jewel.  The one that only has like 5 ingredients in it.  I lather that up with avocado and throw the chicken on there with some lettuce.  Yummers.

*Avocados.  I use the heck out of these.  They replace all condiments for me.  Go to Costco and buy the big bag.  Get a big bag of lemons too.  I use a ton of lemon juice.

*Salad dressing is a hard one.  I have been putting a little LF yogurt in the blender with fresh dill, a little honey, cucumber and a bit of olive oil.  I just keep that in the fridge and it lasts a few days. My new favorite dressing is lemon based. I take 1/4 cup fresh lemon juice and mix with fresh sage, rosemary and thyme. Little seasalt. Mix well then I add a cup of good EVOO. Lasts a few days and I even dip veggies and bread in it. YUM.

*Basically, I am just eating really fresh.  All organic veggies.  I wouldn’t waste money on some organic things like bananas and avacados, stuff like that with thick skin. I am also growing some veggies in my garden.  All fresh hhhhherbs on my back porch.

*For on the go, Lara bars are filling.  Watch out for the ones that have raisins and coconuts in them.

*To satisfy the munchie hunger, Cape Cod chips or any other chips made in sunflower oil is okay.

*Another SIL on Thor’s side…a.k.a. RunnerGirl….she has this same allergy and she has been eating raw for years.  She is an expert at it.  She suggested something yummy and I have been drinking it.  You can’t really have pop or other drinks, but you can have fresh juice…an alternative to juice is to put some fresh mint, ice, fresh lime or lemon juice and a bit of agave nectar or honey into the blender (I have a Magic Bullet. Haters, suck it.  This thing rocks.)  I like the agave nectar because it is just a touch less sweet than honey.  This is a really refreshing cool drink for the summer and I recommend.

*crackers are hard.  I just loved eating crackers and cheese.  But there are some gluten free crackers that are good.  Just stay away from anything that has corn or soy in them.  Costco has these pita round crackers that are awesome.

*I made this really delicious kale and potato salad.  I will post the recipe.  It’s really easy and I ate it warm after I  made it and cold the next day.  Kale is SO good for you….
